When I was looking for ways to use up our Thanksgiving leftovers last year, I remembered a chicken casserole with mashed potato topping recipe that I loved. I decided to try & recreate it with turkey. Best. Decision. Ever. I’m going to have to go recook our Thanksgiving feast so I have more leftovers to make another batch of this. It’s that good!
Ingredients
3 cups leftover turkey, chopped
3 cups leftover corn
2 cups leftover gravy
1 teaspoon dried thyme
1/2 teaspoon salt
1/4 teaspoon black pepper
2 cups leftover sweet potatoes
1/2 cup cranberries {optional}
Directions
Place all the ingredients, except the sweet potatoes in a large bowl and mix well.
Spray a 9×13 pan with cooking spray or grease with olive oil and add turkey mixture. Top with sweet potatoes and bake at 350 for 30 minutes or until the potatoes are lightly browned.
Serve warm.
