When I issued $20/$20 Challenge, I knew my readers would show up in full force. What has been an awesome surprise is that my friends are joining in the fun, too! Today my dear friend, Jane, from Thy Hand Hath Provided {you know, the one with the AWESOME cookbook}, shares her pantry pictures:
A few years ago, I was much more of a purest in terms of eating local and in season produce year round as much as possible. With a growing family and a baby in the house again, I’ve had to make some food compromises in order to stay sane. We still garden, can and freeze a lot of our food but we’ve also been making good use of stores like Costco to make sure there is plenty of healthy food and snacks on hand for our busy household of six.
Our old house came with a narrow pantry but the shelves were not the best. My husband built new ones so we could make better use of the space. Our pantry holds canned goods, canning supplies, kitchen appliances we don’t use every day, potatoes, squash, honey {from our bees}, some homeschool supplies and a mishmash of other items. I’m so thankful for this space!
We have two freezers in addition to the one above our fridge. The upright holds extra freezer meals, frozen veggies, zucchini bread, venison from a friend, pork from our pig, and a few convenience items for quick lunches when we’re short on time.
Our chest freezer holds more frozen veggies, frozen jam and pesto, the rest of our pig, lard, etc.We don’t have much of dry goods pantry other than standard baking supplies. I try to buy what we need as we go (rice, oats, etc.) because our toddler loves to get into my cupboards and distribute items throughout the house.
I am constantly challenged to find recipes that use the frozen and canned food we have on hand instead of getting sidetracked by new recipes that require me to buy all the ingredients at the store. I put together a cookbook a couple years ago that helps me do that. We feel incredibly blessed by the bounty we have on hand. I try my best to share it with others by taking meals to people going through difficult times.

I have Jane’s cookbook and LOVE it!!! I have really enjoyed the ease of the recipes and how using them allows me to feed my family healthy, tasty food! :-))

I am so impressed by the strategies that folks use to make things work for them, depending on their lifestyle.
I read Jane’s blog, too, and both she and Mavis have inspired me to garden, keep chickens, and be more generous.
