“Meatloaf, smeatloaf, double beatloaf, I hate meatloaf.” ~ Randy from A Christmas Story.
If you think you have found the best meatloaf recipe on the planet, and you can’t imagine ever trying another meatloaf because you’ve found the one, then I want you to reconsider and try this recipe. Because it truly is, the best meatloaf I’ve had in my entire life. And I’m not just saying that because I didn’t make it or have to clean the dishes the other night after the HH made us dinner.
Seriously, ever since the big move and my husband leaving his 70-80 hour a week job of 25 years this past summer, he has been cooking up a storm. Who knew, this guy who previously prepared one, maybe two meals a year and didn’t even know where the dishes were kept in the kitchen was hiding such a talent. I’m beginning to think there isn’t anything he can’t make and I’m tempted to ask him to try French pastries next!
So back to the meatloaf. It truly is, the best meatloaf on the planet. I don’t know if it was the bread crumbs, the sauce he prepared or what, but you need to give this recipe a try. Like soon.
My husband doubled the meatloaf recipe below and baked it in a pullman pan, which I believe is the best pan for a meatloaf as the slices are the perfect size for serving.
Ingredients
1 lb. 93% lean ground beef
1 cup dried bread crumbs
1/2 cup diced yellow onion
1/2 cup milk
1 large egg beaten
2 tbsp. ketchup
1 tbsp. steak sauce
1 tsp. dried parsley leaves
3/4 tsp. salt
1/2 tsp. garlic powder
1/4 tsp. ground black pepper
For the Topping
1/4 cup steak sauce
1/4 cup ketchup
2 tbsp. packed light brown sugar
Directions
Preheat oven to 350F
In a large bowl, add the beef, bread crumbs, onion, milk, egg, ketchup, steak sauce, parsley, salt, garlic powder, and ground pepper. Gently mix the ingredients together until well combined.
Press the meat loaf mixture into a loaf pan. Smoothing the top of the meatloaf so it’s even.
In a small bowl, add 1/4 cup ketchup, 1/4 cup steak sauce and the brown sugar. Stir to combine. Spread half of the sauce over the top of the meatloaf making sure to cover the entire top of the meatloaf with sauce. Set aside the remaining sauce for leftovers or add a wee bit more before serving.
Bake meatloaf uncovered for 50 – 55 minutes, until an instant-read thermometer inserted into center registers 160°F.
Let the meatloaf rest for 5-10 minutes before serving.

I can’t make meatloaf to save my life. Probably because I can’t follow directions. It’s one of my husband’s favorite meals. Maybe I’ll try again tonight….

What kind of steak sauce was it? A1?

I hated meatloaf up until about 10 – 15 years ago when I was served the best meatloaf in the world. After that, I discovered yet another recipe for a meatloaf that is equally as good.
The best meatloaf is called Beer Meatloaf and the second one is called The Best Meatloaf Ever. I only make these two and the worst meatloaf has a package of dried onion soup in it and second worst meatloaf has oatmeal in it.
I raised my kids on the two meatloaves I mentioned and the sides were ALWAYS mashed potatoes and cooked carrots with butter and brown sugar. It is on the menu for when all the kids are home for Christmas.

My husband loves meatloaf, while I don’t really care for it. I am going to try your husband’s recipe to see if it will change my mind. Thanks so much for posting this recipe.

I disagree, the absolute best way to make Meatloaf involves a cast iron skillet. You get all kinds of crunchy bits doing it in a skillet. Biscuits and Such blog as the best recipe I’ve ever made but the secret is doing it in the cast iron skillet.

Ooohh that does sound good. I bet it’s the steak sauce! I always use my mom’s meatloaf recipe, because it’s the best 😉 She uses cornbread stuffing and onion soup mix. I’ve never made a meatloaf with a ketchup sauce on top. Though I do eat my meatloaf with ketchup. I may have to give this recipe a try!

That is basically how I do it, but I substitute oatmeal for the bread crumbs. Try it!

I never liked meatloaf. I think it’s funny how many husband’s love it and the wives don’t :). I make mine with oatmeal but my husband prefers to use soda crackers.
If the steak sauce is A-1, you had me there! I used to drink that stuff straight from the bottle when I was a kid.
Also, Mavis, do you mind sharing some blogs you like reading. I used to read 5-10 blogs and I’m down to 2-3 because their writing is getting so political or raunchy or too salesy.

Is the Aldi’s sauce like A1 or is it like 57?
Mavis Butterfield says
It smells and tastes like A1. 🙂

Evidently my meatloaf is not meatloaf because it doesn’t contain ketchup, steak sauce, oatmeal or bread crumbs. I use 3/4 cup tomato sauce, 1 egg, onion, garlic herbs, salt and pepper.

We love meatloaf here in the Kaufman house and I am always on the hunt for a new recipe! I don’t think I have ever made meatloaf the same way twice. I’m definitely going to try this recipe soon! By the way thanks for posting about Aldi butter being on sale for $1.99! We live in Michigan so I wasn’t sure if it would be on sale here but it was! I use a lot of butter in the winter so I was glad I could stock up!

I wish my hubby liked meatloaf. I love it and haven’t had it in years. I think his mom use to make it with onion soup close to every week and now he has an aversion to it. Maybe I’ll try this one night but have a frozen pizza on standby. I wouldn’t mind eating all the leftovers if he doesn’t like it!

Excellent plan, Carrie!

I’m not sure, Mavis…..my meatloaf is pretty much the best on the planet so I’m not sure he could top mine! But I’m willing to give it a go – I have 5 meatloaves in the freezer right now (I make a big batch in my Kitchen Aid and freeze in 3 person portions) but when they’re gone….HH’s meatloaf will be my next experiment!
