Here’s a super easy, super tasty strawberry shortcake recipe with a twist. The addition of the chocolate chips just kind of sends this recipe over the top. I mean, who is not a fan of a chocolate/strawberry combo? It totally works here!
Quick and Easy Strawberry Shortcake With Chocolate Chips
Ingredients
- 1 package {16 oz} strawberries , hulled and quartered
- 1/4 cup plus 2 tablespoons sugar , divided
- 2 1/2 cups all-purpose baking mix {like Bisquick}
- 1/2 cup mini chocolate chips {I used semi-sweet}
- 2/3 cup buttermilk
- 1/4 cup unsalted butter , melted
Instructions

Preheat oven to 425F. Toss half the strawberries with 2 tablespoons sugar and set aside.

In a mixing bowl, stir together baking mix, chocolate chips, 1/4 cup sugar, buttermilk, and butter until blended. Using a 1/3 cup measure, scoop 6 shortcakes onto an ungreased baking sheet and bake until golden brown or about 15 minutes. Cool completely on wire rack.

Mix sugared strawberries and plain strawberries. Cut shortcakes crosswise in half. Spread strawberry pieces on bottom half and top with whipped cream. Top with other half of shortcake. Place a sliced shortcake on a plate, add fresh whipping cream and strawberries and serve. Enjoy!

Good timing! I wanted to do a traditional shortcake instead of angel food cake for the wonderful strawberries ripening in my greenhouse. I snuck a few today and they’re deee-lishusss! The Toscana variety is really prolific and has hot pink blossoms, so it’s pretty, too! Wish I could post a pic here for you. Thanks for the recipe!
