I feel guilty even posting this recipe. Why? Because it is so FREAKIN’ easy. Seriously. Many of you have left comments this past week wanting to know how we {okay I, let’s not forget the HH doesn’t even know where I hide the dishes} prepare our fresh patty pan squash.
So if you’ve never grown {or tasted} patty pan squash before, it basically tastes like zucchini but it looks way cuter. The bushes are a little larger than a traditional zucchini plant, but let me tell you Bob, patty pan squash are a total show stopper. If you have the room, give them a try next summer.
Ingredients
Small Patty Pan Squash {the smaller the better}
Olive Oil
Salt
Pepper
Trim the ends of the squash, and place in a large bowl. Pour a couple of tablespoons of olive oil over the squash, sprinkle a little salt and pepper and stir until the squash is coated with olive oil.
Fire up the grill. Fill up a grill pan with squash and seasonings, and grill until tender.
That’s it. Super easy!

I normally cut it open, de-seed it, slice it into 1/8″ or wider pieces, cut the peels off (as they are really tough and don’t soften up well) then sautee them in butter with salt and pepper. PITA to prepare but delicious to eat. I’ll definitely try grilling next time.

Are you thinking of winter squash? Patty Pan squash is a type of summer squash that has thin, tender skin. My favorite way to prepare it is to cut the ends off, cut it into chunks, and then steam it with some onions and green beans. I like to serve it with herb butter.

I’m so glad you posted this, as simple as it may be. My neighbor gave me some, I didn’t even know what they were called. We called them UFOs… Anyway, I had no idea how to cook them ๐

These look so cute! Hope they grow well in Texas. I’d love to try some next spring. We had too much rain for a garden this year. We couldn’t mow it much less till it up. I love gardening, putting up fresh veggies and eating them as well.
We did a version of the square foot garden one year. From one row of Comtender Green beans, I canned 97 pints, froze some (never again), and gave lots away. I was sick of green beans before they finished producing. We finally just pulled them up. Couldn’t even give them away. LOL
