Today I wasted spent about two hours on Pinterest. How does that happen anyway? I don’t even know what the heck I was over there for the first place. Anywho, so there I was all tired and hungry from doing nothing but sitting on my keister all afternoon when I wandered into the kitchen looking for something simple to eat for lunch.
I was half tempted to just open a can of tuna and start eating right out of the can, but I didn’t. I actually threw something together. ๐ True, it wasn’t Pinterest worthy, but it was mighty tasty.
Ingredients for Salad
1 head romaine lettuce, chopped
1 {5 oz} can tuna, drained
1/2 cup chopped carrots
1 small cucumber, diced
Salt and pepper to taste
Ingredients for Dressing
3 tablespoons lemon juice {juice from 1 lemon}
1 tablespoon lemon zest {zest from 1 lemon}
3 tablespoons mayonnaise
1 tablespoon olive oil
Mix all dressing ingredients in a small bowl. Place all the salad ingredients on a plate, pour dressing over salad and toss. Salt and pepper to taste. Serve cold and enjoy!

I bet you money that recipe would be even BETTER w/ canned sardines.
(w/ a lot less mercury!)
Even flavored (mustard, smoked, or hot) sardines might work.
