I’m all about using up the crazy amount of turkey we have leftover so I can get it out of my fridge. My family loves this chicken casserole so much I decided to adapt it and make it a turkey casserole. Sometimes I’m a genius. This was one of those times. It was so freakin good! It’s up there as one of my all-time favorite leftover recipes.
So go open your fridge, pull out these ingredients you probably have shoved in there and make this magic happen.
Ingredients
3 cups leftover turkey, shredded
2 cups corn kernels {I used frozen}
2 cups carrots, chopped
2 medium potatoes, cubed {you could also use cubed sweet potatoes instead}
2 cups leftover gravy
1 cup leftover green beans
1 tablespoon olive oil
1 teaspoon dried thyme
1/2 teaspoon salt
1/4 teaspoon black pepper
2 cups leftover mashed potatoes
Directions
In a large skillet, saute the potatoes and carrots in olive oil over low heat until fork tender. Cool and set aside.
Place all the ingredients, except the mashed potatoes in a large bowl and mix well.
Spray a 9×13 pan with cooking spray and add turkey mixture. Top with mashed potatoes and bake at 350 for 30 minutes or until the potatoes are lightly browned.
Serve warm.
