Are you ready for the easiest stew recipe on the planet? This is it. And just because it’s fast, doesn’t mean it’s not delicious. Cause it totally is. Plus the addition of the cannellini beans and the Italian tomatoes give it an Italian taste, which I loved!
Ingredients
6 cups beef broth
1 pound beef stew meat, cut into 1″ pieces
1 {15 ounce} can cannellini beans
1 {14.5 ounce} can Italian stewed tomatoes
2 cups frozen mixed vegetables
2 tablespoons olive oil
Directions
In a large pot over medium-high heat, brown meat in oil. Add in remaining ingredients, stir and simmer for 1 hour. See how easy that was? Now go enjoy your tasty, simple stew!

Hi Mavis, Thank you for all the fabulous recipes you post. I haven’t tried one that my family didn’t enjoy!! My hubby now ask, is this a Mavis recipe? Ha!!!
I’ll be trying this…but may try the crockpot!! My hubby & I are renting a cabin for a few days…this would be great to come back to after a day of hiking!!
