Even though I don’t make a weekly menu plan, I still love the idea of having a bunch of recipes right in front of me to choose from. I know this week is going to be a bit crazy for me, so I’m focusing on freezer meals and casseroles as main dishes and then pretty simple sides.
Here are a few recipes for you to choose from:
- Freezer Meal Breakfast Burritos – Sometimes I want a hearty breakfast, I just don’t want to cook it. Bingo. {Pin for later}
- Corn Pancakes – I admit, I was kinda weirded out by the idea of this, but I soon learned corn pancakes rule. {Pin for later}
- Almond Lemon Poppy Seed Biscotti – If it’s a coffee-on-the-go kind of morning… {Pin for later}
- Crock Pot Steel Cut Oatmeal with Apples and Brown Sugar – Your house will smell better than any candle you’ve ever burned after you cook these. Yum. {Pin for later}
Main Dish and Freezer Meal Ideas
- Baked Macaroni and Cheese – Tell that Kraft crappity crap to take a hike and make this pan of awesome. {Pin for later}
- Chicken and Kale Enchilada Casserole – You won’t even know you’re eating kale. Which is totally perfect if you are a non-kale lover, like myself! {Pin for later}
- Freezer Meal Ground Beef Pot Pies – Throw it in the oven and BAM. Dinner is served. {Pin for later}
- Freezer Meal Sweet and Sour Meatballs – These are always a hit with the whole fam- even the picky ones! {Pin for later}
- Long Grain Rice Salad – It’s rice on crack. Not that I’m promoting crack, but it’s pretty dang addictive. {Pin for later}
- Oatmeal Rolls – These are perfect if you’re looking for a dinner roll with a little something extra. The oatmeal changes the flavor and makes me love bread even more. {Pin for later}
- Spaghetti Squash w/ Almonds – Strange pairing? Try it and you’ll probably agree it’s the new pb&j! {Pin for later}
- Marinated Zucchini Salad – It’s simple. It’s tasty. It’s a winner in my book. {Pin for later}
- Peanut Butter and Nutella Cookies – When just peanut butter or just Nutella won’t do, combine them. You won’t regret it. {Pin for later}
- Rainbow Salsa – I love having salsa on hand for a quick after school snack for the kids. It’s healthy too so it makes me feel like a good mom for a few minutes at least. {Pin for later}
- Popcorn in a Bag – Way healthier than regular microwave popcorn and way more delicious if you ask me! {Pin for later}
- Hershey’s Secret Kiss Snowball Cookies – It has a gooey chocolate center. Need I say more? {Pin for later}
- Pumpkin Chocolate Chip Bars – They’re vegan, they’re easy and they’re delicious. Basically a triple threat. {Pin for later}
- Banana Fudgesicles – Eat these and will summer to get here already! {Pin for later}
- Peach Cobbler w/ Canned Peaches – While fresh fruit is always my favorite to use, this recipe proves canned can be mighty tasty too! {Pin for later}
- Applesauce Spice Cake – I love making this so we can eat on it all week. It’s not a gobble in one sitting type cake, so it lasts- which is totally rare for a dessert around here. {Pin for later}
Canning Recipe of the Week
Fresh Tomato Sauce – Once you start canning your own tomato sauce, it’s pretty much impossible to go back to the jarred variety. {Pin for later}
