Even though I don’t make a weekly menu plan, I still love the idea of having a bunch of recipes right in front of me to choose from.
Here are a few recipes from my recipe collection I thought you might like:
Granola with Walnuts, Pumpkin Seeds and Mango – I like that I can make this at the beginning of the week, and the kids pretty much be independent from there. {Pin for Later}
Pineapple-Orange-Banana Smoothie – Now that the weather is getting nicer, these kind of feel like the promise of summer in a cup. {Pin for Later}
Whole Wheat Buttermilk Pancakes – “Whole wheat” right in the title basically makes you feel like you’re a shoe in for mom of the year. {Pin for Later}
Easy Mini Quiche with Bacon – These are awesome warm or cold, and if you have the habit of running late in the morning, they are a quick pop in your mouth and go sort of breakfast. {Pin for Later}
Slow Cooker and Freezer Meal Ideas
Easy Freezer Meals – Sloppy Joes – Make ’em when you’re motivated, eat ’em when you’re not.
Spinach Lasagna Rolls – I love to have these all ready and made, so when we go to end-of-season sports potlucks, all I have to do is pull it out to thaw and bake it. {Pin for Later}
Slow Cooker Macaroni and Cheese – It’s almost getting too warm outside to enjoy this hearty comfort food, so make it one last time before fall…note, I said “almost.” {Pin for Later}
Crock Pot Baked Potatoes – I love these on days when we will all be eating at different times. The kids and the HH can just grab a tater and load it up when their schedule allows. {Pin for Later}
Soups , Salads and Main Dish Ideas
Chicken Tortilla Casserole – I think I still have Cinco de Mayo fever, because this casserole has been on my mind all week. {Pin for Later}
Roasted Five-Spice Carrots – These are AWESOME along side the Sloppy Joes. {Pin for Later}
Strawberry and Spinach Salad – You could serve this with the Mac & Cheese for a lighter, health-packed punch. {Pin for Later}
Slow Cooker Quinoa Chicken Chili – This makes an awesome lunch, and if there are leftovers, I totally recommend putting a ladle full of chili over the top of your baked potatoes. Yummy. {Pin for Later}
S’mores Cookies – Be aware, having these in the house can be dangerous. {Pin for Later}
Strawberry Rhubarb Crisp – If something has strawberries and rhubarb, it’s considered a health food. {Pin for Later}
Vanilla Bean Ice Cream – Put it on the crisp, the cookies, or heck, the baked potatoes. Ice cream makes everything better. {Pin for Later}
Homemade Magic Shell – In case you have any ice cream left, after you’ve topped everything you eat this week 🙂 {Pin for Later}
Low Sugar Strawberry Jam – Since strawberries are pretty cheap right now, it’s a good time to stock up and make some jam. {Pin for Later}

THANK YOU for the Homemade Magic Shell recipe! I made it when you posted it earlier this year (and sadly realized that my son, now 8, had never had the store bought kind that my husband and I adored as children…most likely because I’ve passed it by due to its cost–YIKES!). Now my son and DH think I’m an ice cream topping rock star, as well as our dear friends and their two kiddos, too. So far, we’ve made several batches — some using chocolate chips and some with peanut butter chips (peanut butter leftovers were great on bananas for breakfast, too!). Next on our list are chocolate raspberry chips and butterscotch chips. I LOVE that this is a great way to use up all those chips in my freezer that never made it into cookies and that this is a SUPER COOL and EASY potluck dessert contribution! Thanks again!
