I’m a sucker for hummus. I can’t get enough of the stuff. But this recipe kicks hummus’ booty to the curb. I dare you not to eat it with a spoon! I totally did. And then with some crackers. And then with some carrots. And then with some pita chips. Until it was gone. All gone. Yum.
Ingredients
1 can cooked white beans
1/2 cup onion, chopped
1 clove of garlic, minced
2 tablespoons olive oil
1 teaspoon fresh parsley
1/2 cup sun-dried tomatoes, finely chopped {I used these tomatoes}
1 tsp paprika
1 1/2 tablespoons fresh lemon juice
Salt and pepper to taste
Directions
In a small saucepan, heat olive oil over medium heat. Saute onion and garlic until onions are translucent and garlic is browned. In a blender or food processor, mix the beans, lemon juice and sauteed onion/garlic mix and puree until smooth {if a few chunks remain, that’s okay too}.
Mix tomatoes with the paprika and sauteed onion into the bean puree. If the dip is too thick, you can swirl in a little olive oil. Season to taste with salt and pepper. Serve with pita chips, fancy crackers or fresh vegetables. Enjoy!

I love hummus so much, on hot toast with sliced tomatoes, for lunch with carrot and celery for mid afternoon snack, with crackers etc. I will make this one and if you are right the hummus may well have a competitor for my affections, best wishes Wendy

I am wondering if there is a specific bean to use and if these should be drained prior to using. My daughter used white kidney beans and I used Great Norther Beans since that is what I had on hand. I drained off most of the liquid in the can, but not all since I thought it might get too dry. It was a little too ‘loose’ for me. My daughter drained and dried off her kidney beans and said she actually needed to add a little olive oil to hers. Could you please clear this up for me! I loved the taste and want to make sure the next time I get the right consistency. Thanks!

I make something similar with white beans, an avocado and lots of basil. But I am looking forward to trying this one. Sounds delicious!
