We have officially entered zucchini season stage one. So when I read Mama JJ’s post the other day about zucchini relish, I decided I’d give it a try. I like pickled relish so I am assuming I would like zucchini relish too. I could give it away as gifts, I could use it in tuna or egg salad, even potato salad too; or I could use it on hot dogs.
In the end I whipped up 10 1/2 pint jars + a little extra of the stuff. And I must say it does smell pretty good too. So guess what’s on the menu for tonight?
