This Memorial Day, I’m preparing so many tasty recipes I’m going to have to wear my elastic-waist pants. That’s appropriate at a neighborly gathering, right? Right?! The problem is the sides. There are so many good options you can’t just put one on your plate, you have to a little of like 12 different ones. And that might be okay if dessert wasn’t part of the BBQ package. So this year I’m limiting our feast to 10 options. Here’s what I’m cooking:
1. Garlic Beef Kabobs: Anything on a stick just tastes better. That’s so true with these kabobs! {Pin it for later}
2. Peach Ginger Glazed Chicken: I’ve had a lot of grilled chicken through the years and most of it was pretty BLAH. Combine the flavors of peach and ginger and BAM. Holy flavor power punch. {Pin it for later}
3. Bacon Wrapped Corn on the Cob: I have a family full of fresh corn on the cob lovers, so I was nervous to fiddle with their beloved corn. But bacon never does me wrong. This recipe is no exception! {Pin it for later}
4. Smashed Potatoes with Bacon and Chives: The most requested side dish at all of my BBQs now. Hands down. {Pin it for later}
5. Kentucky Fried Chicken Cole Slaw: If you are a sucker for a good coleslaw, this one will hit the spot. {Pin it for later}
6. Slow Cooked Boston Baked Beans: I’m not sure a BBQ is a true BBQ unless someone brings baked beans. If you are going to be that someone, these are the beans you should be bringing. Yumm-mmy! {Pin it for later}
7. Dijon Potato Salad with Green Onions: What looks like a simple potato salad packs a pretty powerful flavor punch. {Pin it for later}
8. Pasta Salad with Broccoli, Carrots, and Sun Dried Tomatoes: One of my very favorite pasta salads. A rich combination of so many flavors I love! {Pin it for later}
9. Red, White and Blue Cupcakes: It’s pretty handy when festive collides with delicious! {Pin it for later}
10. Patriotic Ice Cream Sandwiches: These little guys are so simple, you can pass the whole project off to your kids and they’ll have them done in 5 minutes flat- I know this from experience! {Pin it for later}

Whoa…”tastes like KFC” coleslaw?!! Are you kidding me?!! HOOK ME UP! I start craving that stuff by the barrel the moment the weather turns warm. It’s the only fast-food thing I can’t/won’t give up. It’s my guilty little secret. 😉

Oh it all looks so good! I go all out for the day too but this year I am breaking tradition by smoking my first “swineapple”. Yes. A hollowed out and cleaned pineapple stuffed with boneless pork ribs with the entire thing wrapped in bacon and apple and peach wood smoked on the grill for about 6 hours. I have never had one but my boss made one last week and said it was amazing, soooo that is what is on the menu this weekend as the main dish and I am totally making some of your sides that look super yummy!
